Led by Executive Sous Chef, Youssef Darwish, the culinary team from Taj Palace Dubai scored highly at the recent Emirates Salon Culinaire (ESC), held in conjunction with the regional Gulf Food Hotel and Equipment showcase.

The success across various disciplines reflected the diversity of the restaurant offering at the hotel, which includes Mediterranean, Turkish, Northern Indian,Asian and Japanese restaurants.

More than 1,300 chefs competed in the event– including those from 25 five-star hotels – and the Taj Palace Dubai team walked away with six merit certificates as well as a bronze medal for Virnee Espiritu for his presentation of tapas, finger food and canapés.

Other distinctions were awarded in desserts (Prashant Kumar), new Arabian cuisine (Faraj Salah), vegetarian (Jinu Joseph), open showpiece (Vicky

Rozario) and plus a merit for dressed lamb in practical butchery skills (NelvinoFernandes).

According to Youssef, whose own specialty Arabian feast also earned a merit, the Emirates Salon Culinaire was an opportunity for his team of chefs to demonstrate to their peers the scope of their abilities and practical skills: “To be recognised by international judges from the World Association of Chefs’ Societies is a tremendous boost for our young chefs, and hopefully this will serve to inspire them to practice and perfect their skills,” he said.

“By earning recognition across a broad range of categories, the team at the Taj Palace Dubai has underlined the diversity of our restaurant menus where guests can enjoy dining from around the world.”
