Cookie manufacturer, Traditional Baking, continue their annual trend of double digit growth despite the current economic climate, citing quality products at a price point that is profitable for their clients.

Traditional Baking manufactures 2 million cookies a day at their 60,000 square foot facility in Bloomington California with an additional 100,000 square foot of warehousing and distribution space in Redlands California.

CEO, Kathy Voortman, moved to California in the 1980s with three brothers to launch a West Coast division of Voortman Cookies, the Canadian company her father and uncle started together in 1951.

The facility has a SQF-2000 certification. The Safe Quality Food (SQF) certification is recognized by retailers and food service providers around the world by those who require a rigorous, credible

food safety management system. The SQF program is recognized by the Global Food Safety Initiative (GFSI) and links primary production certification to food manufacturing, distribution and agent/broker management certification.

Twenty-five years later the West Coast operation is an independent cookie manufacturer with over 35 different cookie varieties. Traditional Baking specializes in seasonal cookies sold to grocery stores, drug stores and mass merchants nationwide. Some cookies are manufactured for outside customers for use in institutional food service programs, in-store bakeries and other channels.

"Maintaining double-digit growth for the past several years despite the economy has been difficult. During these times there's a temptation to cut costs by using inferior ingredients. That is a short-term band aid approach to a situation that requires a longer-term strategy and more patience in the marketplace,' states Kathy Voortman.

"Rather than use inferior ingredients we have been creative in cutting costs in other areas so that we can meet the profitable price point for our corporate clients. This means working on tighter margins that do not compromise our product quality, customer service or distribution. Most companies would find this counter-intuitive, but the insistence not to compromise on our overall product quality and corporate reputation has allowed us to maintain our consistent growth," concludes Voortman.
